Delight your taste buds with the Romana Salad bathed in roasted garlic vinaigrette as you tear away at the hand-stretched Pizza Roberta, topped with your chef’s exquisite tomato sauce and a generous meat-lover’s assortment of treats. And before you stroll back into the gentle stream of passersby, don’t forget to comfort yourself with a creamy panna cotta and cozy cappuccino.

POETRY IN FLAVOR

CHEF DIEGO HERNÁNDEZ

Born and bred in Mexico City, Chef Diego’s love for cooking was inspired by his grandfather. Opting to study at the Colegio Superior de Gastronomia, he subsequently earned the opportunity to study a postgraduate degree at the ESHS in Seville. His specialty is now Italian, influenced by modern Spanish cuisine, and he has a fondness for Mediterranean cuisine, given the freshness of its ingredients and French foundations. Chef Diego can currently be found delighting guests of the Italian Trattoria, Tavola, at The Grand at Moon Palace Cancun.

Had a lovely time at the Moon palace the Grand, lovely hotel and staff are so helpful and friendly. Will be booking again for next year, food was lovely and plenty of restaurants to choose from. Lots of pools to entertain everyone.
